Mooli Paratha

Radish is cheap, and this is the best thing to do with it.

40 min Some work Vegetarian

Ingredients

  • 2 cups atta
  • 3 large radishes, grated
  • 1 tbsp ginger-chilli paste
  • 1 tsp ajwain
  • 1 tsp coriander powder
  • 1/2 tsp amchur
  • Coriander
  • Ghee

Method

  1. Grate the radish, salt heavily, rest 15 minutes. It will release a shocking amount of water. Squeeze it out completely — save it and knead the dough with it.
  2. Mix the squeezed radish with the spices and coriander.
  3. Stuff, seal, and roll very gently. Mooli filling is the wettest of the lot.
  4. Hot tawa, ghee both sides, cook until well browned.
  5. Curd, butter, pickle.

Questions people ask about Mooli Paratha

How long does Mooli Paratha take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of atta in Mooli Paratha?

Use plain flour, though the dough will be softer and need less water.

Can I make Mooli Paratha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mooli Paratha vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Mooli Paratha?

Curd, butter, pickle. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
