Naan on the Tawa

No tandoor. A hot pan and a gas flame, and it puffs and blisters like it should.

30 min Some work Vegetarian No oven needed

Ingredients

  • 3 cups plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp dry yeast in 2 tsp warm water with 1 tsp sugar
  • 1/2 cup milk
  • 4 tbsp yogurt
  • 1/2 cup butter
  • 1 tsp salt

Method

  1. Sift the flour, soda and baking powder. Work in the butter and salt.
  2. Yogurt, milk and the yeast mixture. Knead until smooth and leave it 4 hours until doubled.
  3. Roll a lime-sized ball a little, then stretch it by passing it hand to hand into the teardrop shape.
  4. Cook one side on a hot greased tawa only.
  5. Then hold it over an open flame, cooked-side down, until the top blisters and chars in spots. That's the tandoor bit.
  6. Butter it while hot.

Questions people ask about Naan on the Tawa

How long does Naan on the Tawa take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of curd in Naan on the Tawa?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Naan on the Tawa ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Naan on the Tawa vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Naan on the Tawa without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Naan on the Tawa?

Roti or naan, with curd and pickle. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
