Falooda Royal

Sago, vermicelli, kulfi, ice cream and rose syrup in one glass. Restraint is not the point.

30 min Some work Vegetarian No oven needed

Ingredients

  • 1/2 cup sago
  • 1 cup bean vermicelli
  • A pinch of saffron
  • 4 cups water
  • 1 cup sugar
  • Condensed milk
  • Vanilla ice cream
  • Kulfi, sliced
  • Rose syrup
  • Crushed ice
  • Cherries

Method

  1. Simmer the water, sugar, saffron, vermicelli and sago together for 15 minutes on low, stirring constantly.
  2. Cool it completely. Warm falooda melts the ice cream instantly.
  3. Two spoons of the mixture into each tall glass, then slices of kulfi.
  4. Crushed ice, then a scoop of ice cream, a spoon of condensed milk, and a thin stream of rose syrup.
  5. Cherry on top. Long spoon required.

Questions people ask about Falooda Royal

How long does Falooda Royal take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

Can I make Falooda Royal ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Falooda Royal vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Falooda Royal without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Falooda Royal?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
