Chicken Stir Fry

Twenty minutes, one pan, and you decide how many vegetables go in.

20 min Easy Non-vegetarian

Ingredients

  • 500g chicken, thin slices
  • 1 tbsp cornflour
  • 3 cups vegetables (capsicum, broccoli, beans, carrot)
  • 6 garlic cloves
  • 1 inch ginger
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp vinegar
  • 1 tsp sesame oil
  • Rice for 2

Method

  1. Toss the chicken in cornflour, salt and pepper — that's what keeps it tender.
  2. Sauce mixed in a cup: soy, honey, vinegar, 1/4 cup water, 1 tsp cornflour.
  3. Highest heat. Chicken in one layer, don't move it for 2 minutes, then toss till cooked. Take out.
  4. Garlic and ginger 20 seconds, then hard vegetables, then soft. 3 minutes total.
  5. Chicken back in, sauce poured around the edge. It thickens in seconds.
  6. Sesame oil off the heat. Over rice.

Questions people ask about Chicken Stir Fry

How long does Chicken Stir Fry take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Chicken Stir Fry?

Highest heat. Chicken in one layer, don't move it for 2 minutes, then toss till cooked. Take out.

What can I use instead of chicken in Chicken Stir Fry?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Stir Fry ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Can I make Chicken Stir Fry vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.

What do you serve with Chicken Stir Fry?

Over rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
