Ingredients

  • 3 cups cold cooked rice
  • 10 garlic cloves, finely chopped
  • 2-4 eggs
  • 2 tbsp soy sauce
  • 1 tsp butter
  • Spring onion

Method

  1. Fry half the garlic slowly in oil till crisp and golden. Scoop out — that's the topping.

  3. Cold rice in, press and toss on high 4 minutes. Soy sauce around the edge, butter in.
  4. Separate pan: fry the eggs hard so the edges are lacy and crisp, yolk runny.
  5. Rice in a bowl, egg on top, crispy garlic and spring onion over everything.

Questions people ask about Garlic Fried Rice + Fried Egg

How long does Garlic Fried Rice + Fried Egg take?

About 15 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of rice in Garlic Fried Rice + Fried Egg?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

What do you serve with Garlic Fried Rice + Fried Egg?

Rice in a bowl, egg on top, crispy garlic and spring onion over everything. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
