Bamboo Shoot Salad

Soy, chilli and lime over bamboo shoots. Fifteen minutes and unlike anything else here.

15 min Easy Vegetarian

Ingredients

  • 2 cups bamboo shoots, sliced
  • 2 stalks spring onion, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp chilli sauce
  • 1/4 cup parsley or coriander
  • 1 tbsp oil

Method

  1. Fry the onion and garlic until golden brown, then let them cool. Warm oil on raw shoots makes it greasy.
  2. Combine bamboo shoots, soy, chilli sauce, lime juice, spring onions and the cooled onion mixture.
  3. Parsley over the top.
