Chicken Clear Soup

Twenty-five minutes and it's the thing you want when nothing else appeals.

25 min Easy Non-vegetarian

Ingredients

  • 300g chicken, shredded
  • 1 carrot, thin sticks
  • 1/2 cup cabbage, shredded
  • 6 garlic cloves, chopped
  • 1 inch ginger
  • 1 tbsp soy sauce
  • 1 tsp black pepper
  • 1 tsp vinegar
  • Spring onion
  • 1 tbsp oil

Method

  1. Garlic and ginger in oil, 30 seconds, don't brown them.
  2. Chicken, then 5 cups water. Simmer 15 minutes and skim the foam off the top — that's what keeps it clear.
  3. Vegetables in for the last 4 minutes so they stay crunchy.
  4. Soy, salt, lots of black pepper, vinegar at the end.
  5. Spring onion. Chilli oil if you want it fierce.

Questions people ask about Chicken Clear Soup

How long does Chicken Clear Soup take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Chicken Clear Soup?

Garlic and ginger in oil, 30 seconds, don't brown them.

What can I use instead of chicken in Chicken Clear Soup?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Clear Soup ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Chicken Clear Soup vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
