30 min Some work Non-vegetarian

Ingredients

  • 300g thin rice noodles
  • 500g chicken or tofu, in strips
  • 1 carrot + 1 radish, pickled in vinegar and sugar
  • 1 cucumber, julienned
  • Lettuce, mint, coriander, basil
  • Dressing: 3 tbsp fish or soy sauce, 3 tbsp lime, 2 tbsp sugar, 2 garlic cloves, 2 chillies, 4 tbsp water
  • Crushed peanuts

Method

  1. Dressing first: whisk everything until the sugar dissolves. Taste — sour, salty, sweet, hot, all loud.
  2. Quick pickle: warm vinegar with sugar and salt, pour over the carrot and radish. 20 minutes.
  3. Marinate the chicken in a little of the dressing, then grill or pan-fry hard till charred at the edges.
  4. Cook the noodles, rinse cold, drain very well.
  5. Build the bowl: lettuce and herbs at the bottom, noodles, then hot chicken, then pickle and cucumber.
  6. Dressing poured over at the table, peanuts on top. The contrast of hot and cold is the point.

Questions people ask about Vietnamese Noodle Salad

How long does Vietnamese Noodle Salad take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of noodles in Vietnamese Noodle Salad?

Use any wheat or rice noodle. Rice noodles soak rather than boil, so read the packet.

Can I make Vietnamese Noodle Salad ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Vietnamese Noodle Salad vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
