Grilled Fish with Lemon Butter

Twenty minutes, five ingredients, and it tastes like a restaurant plate.

20 min Easy Non-vegetarian

Ingredients

  • 4 fish fillets
  • 60g butter
  • 6 garlic cloves, finely chopped
  • 2 lemons
  • 1 tbsp parsley or coriander
  • 1 tsp chilli flakes
  • Black pepper
  • Boiled potatoes or salad

Method

  1. Dry the fillets thoroughly and salt them 10 minutes ahead. Both steps are what give you a crust instead of steam.
  2. Hot pan, a little oil, fish skin side down. Press it flat for the first 20 seconds so it doesn't curl.
  3. Four minutes without touching it, then flip for 90 seconds. Done when it flakes at a nudge.
  4. Take the fish out. Butter into the pan, garlic, chilli flakes — 1 minute till golden.
  5. Lemon juice in, swirl, then pour over the fish.
  6. Parsley and pepper. Potatoes or a green salad.

Questions people ask about Grilled Fish with Lemon Butter

How long does Grilled Fish with Lemon Butter take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of fish in Grilled Fish with Lemon Butter?

Use any firm white fish, or paneer for a vegetarian version. Avoid delicate fish in anything that needs stirring.

Can I make Grilled Fish with Lemon Butter ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Grilled Fish with Lemon Butter vegetarian?

Yes. Replace the fish with king oyster mushrooms torn into chunks, or firm tofu pressed dry. Both want a hard sear first, and both go in at the very end, because neither needs more than a couple of minutes.

What do you serve with Grilled Fish with Lemon Butter?

Potatoes or a green salad. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
