Banh Mi

Pickled vegetables, herbs and something savoury in a crisp roll. Fifteen minutes if the pickle is made.

25 min Easy Vegetarian

Ingredients

  • 4 baguettes or crusty rolls
  • 1 carrot + 1 radish, in thin sticks
  • 1/4 cup vinegar, 2 tbsp sugar, for the pickle
  • 300g paneer, tofu or leftover chicken
  • 1 cucumber, in strips
  • Coriander, a lot
  • Mayonnaise, soy sauce, chilli
  • Green chillies

Method

  1. Pickle: warm the vinegar with sugar and salt, pour over the carrot and radish. 20 minutes is enough, overnight is better.
  2. Fry the paneer or tofu with soy sauce until browned on all sides.
  3. Split the rolls and toast them cut side down. The crunch matters more than the filling.
  4. Mayo on both sides, then the protein.
  5. Drained pickle, cucumber, whole coriander sprigs, sliced chilli.
  6. Press the roll shut hard before eating.

Questions people ask about Banh Mi

How long does Banh Mi take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of bread in Banh Mi?

Use any loaf that is a day old. Fresh bread turns to paste in most of these.

Can I make Banh Mi ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Banh Mi vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.
