40 min Some work Vegetarian

Ingredients

  • 2 cups spaghetti, boiled
  • 2 cups milk
  • 5 tbsp flour
  • 5 tbsp butter
  • 4 green chillies, chopped
  • 150g cheddar, grated
  • 2 tbsp coriander leaves
  • 3 stalks celery, chopped
  • 100g breadcrumbs
  • 1 cup flour for the paste
  • Oil for frying
  • Salt

Method

  1. Cook the butter and flour together a minute, then milk in slowly, stirring until thick.
  2. Off the heat and cool it — hot sauce won't hold a shape.
  3. Spaghetti, cheese, chillies, celery, coriander and salt folded in. Roll into balls.
  4. Whisk flour and water into a paste. Dip, crumb, fry until golden.

Questions people ask about Spaghetti Balls

How long does Spaghetti Balls take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of pasta in Spaghetti Balls?

Use any short shape holds sauce better than long; cooking time changes, so go by the packet.

Can I make Spaghetti Balls ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Spaghetti Balls vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Spaghetti Balls?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
