Sattu Sharbat

Roasted gram flour whisked into cold water. Bihar's answer to a sports drink, and older than the idea.

5 min Easy Vegetarian

Ingredients

  • 4 tbsp sattu
  • 500ml cold water
  • Juice of 1 lemon
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp black salt
  • 1 green chilli, minced (optional)
  • Salt to taste
  • Coriander leaves

Method

  1. Put the sattu in the glass first and add water a little at a time, whisking. Tip it all in at once and you get lumps you will never beat out.
  2. Lemon juice, cumin, both salts.
  3. Green chilli and coriander for the savoury version. Leave them out and add jaggery instead for the sweet one.
  4. Drink it straight away — sattu settles to the bottom within minutes.
