45 min A proper cook Vegetarian

Ingredients

  • 250g paneer, crumbled
  • 3 tbsp flour
  • 1 tsp baking powder
  • 4 green chillies, chopped
  • 1/4 cup coriander leaves
  • 2 onions, chopped
  • 4 tomatoes, blanched and chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp chilli powder
  • 1/2 tsp garam masala
  • 1/4 cup yogurt
  • 2 tsp cream
  • 2 tbsp cheddar, grated
  • 4 tbsp oil

Method

  1. Mash the paneer with flour, baking powder, chillies, coriander and salt until it holds together with no cracks.
  2. Shape into small cones and fry golden. Keep the oil moderate — too hot and they brown before the middle sets.
  3. Soften the onions, add ginger-garlic for a minute, then tomatoes until they break down.
  4. Chilli powder, garam masala, yogurt, cream, cheese and 2 cups water. Simmer until oil surfaces.
  5. Stand the cones in the gravy at the table, not in the pan. They soften fast.

Questions people ask about Paneer Cone Curry

How long does Paneer Cone Curry take?

About 45 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of paneer in Paneer Cone Curry?

Use firm tofu, pressed dry first, or halloumi if you cut the salt elsewhere. Both hold shape better than paneer, so add them a minute later.

Can I make Paneer Cone Curry ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Paneer Cone Curry vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Paneer Cone Curry?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
