35 min Some work Vegetarian

Ingredients

  • 2 cups atta
  • 4 potatoes, boiled and mashed
  • 1 onion, very finely chopped
  • 2 green chillies
  • 1 tsp ajwain
  • 1 tsp amchur
  • 1 tsp coriander powder
  • Ghee
  • Curd and pickle

Method

  1. Knead a soft dough with atta, salt and water. Rest it 20 minutes covered.
  2. Mix the filling — mash the potatoes completely smooth, no lumps, or the paratha tears.
  3. Roll a small disc, place a ball of filling, gather the edges over it and pinch shut.
  4. Dust with flour, roll gently from the centre outwards.
  5. Hot tawa, ghee both sides, press the edges with the spatula till golden brown spots appear.
  6. Cold curd, pickle, extra ghee.

Questions people ask about Aloo Paratha

How long does Aloo Paratha take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of atta in Aloo Paratha?

Use plain flour, though the dough will be softer and need less water.

Can I make Aloo Paratha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Aloo Paratha vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Aloo Paratha?

Cold curd, pickle, extra ghee. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
