Sabudana Khichdi

Fasting food that's too good to save for fasting days.

25 min Some work Vegetarian

Ingredients

  • 1 cup sabudana, soaked 4 hours or overnight
  • 1 potato, small cubes
  • 1/2 cup peanuts, roasted and coarsely crushed
  • 2 green chillies
  • 1 tsp cumin
  • 3 tbsp ghee
  • 1 tsp sugar
  • Lemon, coriander

Method

  1. The soak is everything: barely cover with water, leave overnight. A pearl should crush between your fingers with no hard centre.
  2. Drain completely and fluff. Mix in the crushed peanuts, salt and sugar now — this stops it clumping.
  3. Ghee, cumin, green chillies, then potato. Cover, cook till soft.
  4. Sabudana in. Toss on medium 5-6 minutes until the pearls turn translucent.
  5. Stop there. Overcooking makes it a sticky lump. Lemon and coriander.

Questions people ask about Sabudana Khichdi

How long does Sabudana Khichdi take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of potato in Sabudana Khichdi?

Use waxy potatoes hold their shape, floury ones fall apart. For curries you want waxy.

Can I make Sabudana Khichdi ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sabudana Khichdi vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Sabudana Khichdi?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
