Five lemons, six oranges, an afternoon. Then breakfast is sorted for months.

90 min A proper cook Vegetarian

Ingredients

  • 5 lemons
  • 6 oranges
  • 3 cups sugar
  • 5 cups water

Method

  1. Squeeze the juice from everything. Grate the rind of three lemons.
  2. Grind the orange peel and pulp in a food processor.
  3. Juice, rind, ground peel and water into a large pan. Boil, then simmer until reduced by half.
  4. Sugar in, bring back to a boil, then the lowest flame.
  5. The moment it foams, take it off and skim. Overcooked marmalade goes bitter and hard.
  6. Cool, then seal in airtight glass jars.

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Orange Marmalade ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Orange Marmalade vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made orange marmalade keep?

Months unopened in a properly sterilised, sealed jar. Once opened, keep it refrigerated and finish it within a few weeks.
