Custard Sauce

The trifle sauce. Two minutes, and lumps are avoidable if you start cold.

8 min Easy Vegetarian

Ingredients

  • 1 tbsp custard powder
  • 150ml milk
  • Sugar to taste

Method

  1. Dissolve the custard powder in a little cold milk. Cold, always — hot milk seizes it instantly.
  2. Boil the rest of the milk and pour it gradually over the paste, whisking.
  3. Back on the heat, stirring until it boils and thickens.
  4. Use it straight away, or press cling film onto the surface.

Questions people ask about Custard Sauce

How long does Custard Sauce take?

About 8 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

Can I make Custard Sauce ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Custard Sauce vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

How long does home-made custard sauce keep?

Depends what it is: pastes and stocks keep a few days refrigerated or months frozen in portions; dry mixes keep for months in a sealed jar.
