Nimbu Pani

Lemon, sugar, salt, water. The most useful four ingredients in an Indian summer.

5 min Easy Vegetarian

Ingredients

  • Juice of 2 lemons
  • 3 tbsp sugar
  • 1/2 tsp black salt
  • 1/4 tsp roasted cumin powder
  • A pinch of regular salt
  • 500ml cold water
  • Mint leaves
  • Ice

Method

  1. Dissolve the sugar and both salts in a little warm water first. Cold water leaves gritty sugar at the bottom of the glass.
  2. Lemon juice in, then the rest of the cold water.
  3. Roasted cumin powder stirred through — that is the difference between nimbu pani and lemonade.
  4. Over ice, mint bruised between your palms and dropped in.
  5. Taste before serving. It should be sharper than you think, because the ice dilutes it.

Questions people ask about Nimbu Pani

How long does Nimbu Pani take?

About 5 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of lemon in Nimbu Pani?

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Nimbu Pani ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Nimbu Pani vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made nimbu pani keep?

Best made and drunk the same day. Anything blended with fruit separates within a couple of hours, so stir or shake it before pouring.
