Mango Chutney

Ripe mango, black cardamom and cinnamon. Cooked down until it's dark and thick.

45 min Some work Vegetarian

Ingredients

  • 1kg mangoes, peeled and cut lengthways
  • 1.25kg sugar
  • 1 cup cider vinegar
  • 3-4 bay leaves, crushed
  • 8-10 black cardamoms, crushed
  • 2 cinnamon sticks, broken
  • 1 tsp ground cloves
  • 4 tbsp chilli powder
  • 2 tbsp salt

Method

  1. Everything into a heavy-bottomed pan.
  2. Cook on low, stirring constantly, until it goes thick and glossy. Thin bottoms scorch this — use the heaviest pan you own.
  3. Cool, then seal in glass jars.
  4. Leave out the vinegar and chilli, use just cardamom, and it becomes mango muraba.

Questions people ask about Mango Chutney

How long does Mango Chutney take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

Can I make Mango Chutney ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Mango Chutney vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made mango chutney keep?

A fresh chutney is a few days in the fridge; a cooked, sugared one keeps for months in a sterilised jar. Use a dry spoon every time — water is what turns it.
