Jaljeera

Cumin, tamarind and mint, salty and sour rather than sweet. An acquired taste worth acquiring.

10 min Easy Vegetarian

Ingredients

  • A large handful of mint leaves
  • 1/4 cup coriander leaves
  • 2 tsp roasted cumin powder
  • 1 tbsp tamarind pulp
  • 1 tsp black salt
  • 1/2 tsp amchur
  • 1 tsp ginger, grated
  • 1 green chilli
  • 2 tbsp sugar
  • 750ml cold water
  • Boondi to float (optional)

Method

  1. Blend the mint, coriander, ginger and chilli with a splash of water into a green paste.
  2. Strain it through a sieve, pressing hard. Unstrained jaggeera is gritty and the herbs turn bitter within the hour.
  3. Stir in the tamarind, cumin, black salt, amchur and sugar with the cold water.
  4. Chill at least an hour so the spices settle into it.
  5. A spoon of boondi floated on top just before serving, if you have it.

Questions people ask about Jaljeera

How long does Jaljeera take?

About 10 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of tamarind in Jaljeera?

Use lemon juice plus a little jaggery, or amchur. None of them are quite as deep, so taste as you go.

Can I make Jaljeera ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Jaljeera vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made jaljeera keep?

Best made and drunk the same day. Anything blended with fruit separates within a couple of hours, so stir or shake it before pouring.
