Eggless Banana Bread

Three black bananas and one bowl. The easiest thing in this whole section.

60 min Easy Vegetarian

Ingredients

  • 3 very ripe bananas, mashed
  • 1.5 cups atta or maida
  • 3/4 cup sugar
  • 1/2 cup oil or melted butter
  • 1/4 cup curd
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup walnuts (optional)

Method

  1. The bananas must be black-spotted and soft. Yellow bananas have no flavour and no sweetness — this is the whole recipe.
  2. Mash them properly, then whisk in sugar, oil, curd and vanilla.
  3. Sift the flour, soda and baking powder over the top and fold with a spatula until JUST combined. Streaks of flour are fine; overmixing makes it rubbery.
  4. Walnuts folded in, batter into a lined loaf tin.
  5. 180°C for 45-50 minutes. A skewer in the centre comes out clean.
  6. Cool in the tin 10 minutes, then on a rack. Slicing it hot makes it gummy.

Questions people ask about Eggless Banana Bread

How long does Eggless Banana Bread take?

About 60 minutes from starting to sitting down, and it is straightforward. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Eggless Banana Bread?

The bananas must be black-spotted and soft. Yellow bananas have no flavour and no sweetness — this is the whole recipe.

What can I use instead of atta in Eggless Banana Bread?

Use plain flour, though the dough will be softer and need less water.

Can I make Eggless Banana Bread ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Eggless Banana Bread vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Eggless Banana Bread?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Eggless Banana Bread?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
