Rava Cake

Semolina instead of flour, made in a cooker. Slightly grainy, in a good way.

50 min Some work Vegetarian No oven needed

Ingredients

  • 1.5 cups fine rava
  • 1 cup curd
  • 3/4 cup sugar
  • 1/2 cup oil or melted butter
  • 1 tsp baking powder
  • 1/2 tsp soda
  • 1/2 tsp cardamom powder
  • 1/4 cup milk
  • Nuts to top

Method

  1. Whisk rava, curd, sugar and oil together and REST IT 30 MINUTES. The rava must swell or the cake is gritty. This is the only difficult part and it requires no effort.
  2. Add milk to loosen it back to a thick dropping consistency.
  3. Baking powder, soda and cardamom folded in last, right before it goes on the heat.
  4. Into a greased tin, nuts scattered on top.
  5. Cooker with salt in the base, no gasket, no whistle, preheated. Lowest flame, 35-40 minutes.
  6. Skewer test. Cool before turning out.

Questions people ask about Rava Cake

How long does Rava Cake take?

About 50 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Rava Cake?

Whisk rava, curd, sugar and oil together and REST IT 30 MINUTES. The rava must swell or the cake is gritty. This is the only difficult part and it requires no effort.

What can I use instead of curd in Rava Cake?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Rava Cake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Rava Cake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Rava Cake without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Rava Cake?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
