40 min A proper cook Vegetarian

Ingredients

  • 250g thin noodles
  • 150g tofu, cubed
  • 1 cup cabbage, shredded
  • 2 carrots, diced small
  • 1 capsicum, diced
  • 1 onion, sliced
  • 1 tbsp ginger-garlic paste
  • 4 tbsp ketchup
  • 2 tbsp soy sauce
  • 1 tbsp chilli sauce
  • 1 tbsp cornflour in 1/2 cup water
  • Oil for frying
  • 1/2 lemon
  • 1 tsp sesame oil

Method

  1. Boil half the noodles for 2 minutes only, drain, and spread them out to dry. Wet noodles spit in hot oil.
  2. Deep fry the other half in loose handfuls until they hold together and go golden. Drain on paper and pile into a nest on the serving plate.
  3. Stir-fry ginger-garlic, then all the vegetables and tofu, 4-5 minutes on high.
  4. Ketchup, soy, chilli sauce, then the boiled noodles. Toss until everything is coated.
  5. Cornflour water in, one minute until it thickens. Spoon over the crisp nest just before eating — do it earlier and the nest goes soft.
  6. Sesame oil and a squeeze of lemon over the top.

Questions people ask about Crispy Noodle Nest

How long does Crispy Noodle Nest take?

About 40 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of noodles in Crispy Noodle Nest?

Use any wheat or rice noodle. Rice noodles soak rather than boil, so read the packet.

Can I make Crispy Noodle Nest ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Is Crispy Noodle Nest vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Crispy Noodle Nest?

On its own as a main, or with fried rice or noodles. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
