Creamy Chicken Pasta

One pan, twenty-five minutes, and it hits every time.

25 min Easy Non-vegetarian

Ingredients

  • 300g pasta
  • 500g chicken, in strips
  • 8 garlic cloves
  • 1 cup cream or 1 cup milk + 2 tbsp maida
  • 1 cup grated cheese
  • 1 tsp chilli flakes
  • 1 tsp oregano
  • 2 tbsp butter
  • Spinach or capsicum (optional)

Method

  1. Boil the pasta, save two mugs of the water.
  2. Season the chicken well and brown it hard in butter. Take it out.
  3. Garlic in the same pan, then chilli flakes and oregano.
  4. Cream in, scraping up everything stuck to the pan — that's the flavour.
  5. Cheese off the heat so it doesn't split, then pasta and chicken back in.
  6. Loosen with pasta water until it coats rather than clumps. Black pepper.

Questions people ask about Creamy Chicken Pasta

How long does Creamy Chicken Pasta take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of chicken in Creamy Chicken Pasta?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Creamy Chicken Pasta ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Creamy Chicken Pasta vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.

What do you serve with Creamy Chicken Pasta?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
