Bharwa Karela

Bitter gourd stuffed with onion masala. If you've only had it badly cooked, try this.

45 min Some work Vegetarian

Ingredients

  • 6 bitter gourds
  • 3 onions, finely chopped
  • 2 tbsp coriander powder
  • 1 tbsp fennel powder
  • 1 tsp amchur
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric
  • 4 tbsp oil
  • Thread to tie

Method

  1. Scrape the rough skin, slit lengthways, scoop the seeds out. Rub heavily with salt and turmeric and rest 30 minutes.
  2. Squeeze them hard and rinse. That squeeze removes most of the bitterness — skip it and the dish is inedible.
  3. Filling: fry the onions till golden, then all the powders and salt. Cook 5 minutes.
  4. Stuff each gourd tightly and tie with thread.
  5. Wide pan, oil, lay them in one layer. Cover, low heat, turning every 5 minutes for 20 minutes.
  6. Uncover and crisp the outsides. Remove the thread before serving.

Questions people ask about Bharwa Karela

How long does Bharwa Karela take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of onion in Bharwa Karela?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Bharwa Karela ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Bharwa Karela vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Bharwa Karela?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
