Spinach, cream cheese and a tomato-herb top. A green thing that people finish.

40 min Some work Vegetarian

Ingredients

  • 2 bunches spinach, chopped
  • 1/2 cup onions, chopped
  • 3/4 cup cream cheese
  • 25g cheddar, grated
  • 2 tbsp butter
  • 1/8 tsp garlic powder
  • 1 cup tomato puree
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • Salt and pepper

Method

  1. Soften the onions in butter until golden.
  2. Boil the spinach one minute, drain, then squeeze it genuinely dry. Wet spinach ruins this.
  3. Mix with cream cheese, salt, pepper, garlic powder and the onions. Spread into a greased dish.
  4. Cheddar on top, then the tomato puree mixed with oregano and basil.
  5. 180°C, 25 minutes. Stand 5 minutes before cutting.

Questions people ask about Baked Spinach

How long does Baked Spinach take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of spinach in Baked Spinach?

Use any soft green: methi, amaranth, or chard. All release water, so cook it off before proceeding.

Can I make Baked Spinach ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Baked Spinach vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Baked Spinach?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Baked Spinach?

Bread, potatoes or a simple salad. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
