Crisp, stuffed, blistered bread. Better than anything you'll buy frozen.

60 min A proper cook Vegetarian

Ingredients

  • 3 cups maida
  • 1/2 cup curd
  • 1 tsp baking powder, 1/4 tsp soda
  • 1 tsp sugar
  • 3 potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 tbsp coriander
  • 1 tsp ajwain
  • 1 tsp anardana or amchur
  • Butter

Method

  1. Dough: maida, curd, baking powder, soda, sugar, salt and warm water. Knead soft, cover with a damp cloth, rest 2 hours.
  2. Filling: mashed potato, onion, coriander, ajwain, anardana, salt. Squeeze out any moisture.
  3. Roll a disc, stuff, seal, then roll again to 1cm thick. Press coriander and nigella seeds into the top.
  4. Wet the underside with water — that's what makes it stick to a tawa upside down, or use a hot oven at 250°C.
  5. Cook till blistered and brown, about 6 minutes.
  6. Crush it slightly in your hands, then drown it in butter. Chole on the side.

Questions people ask about Amritsari Kulcha

How long does Amritsari Kulcha take?

About 60 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Amritsari Kulcha?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Amritsari Kulcha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Amritsari Kulcha vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Amritsari Kulcha?

Chole on the side. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
