Agar Jelly with Custard

Vegetarian jelly, set with china grass. Layer it with custard and it looks like a restaurant.

40 min Easy Vegetarian No oven needed

Ingredients

  • 2 tsp agar agar powder or 5g china grass
  • 200ml water
  • 1/4 cup sugar
  • 2 tbsp lime juice
  • A few drops food colouring
  • Custard sauce and fruit to serve

Method

  1. Soak china grass at least 2 hours in the water it will cook in, then melt it on a low flame.
  2. Sugar and lime juice in. Strain it — there is always some undissolved.
  3. Colour, then pour into moulds and chill 30 minutes.
  4. Set custard in the mould first and pour the jelly over it for two layers.
  5. Fruit cocktail on top.

Questions people ask about Agar Jelly with Custard

How long does Agar Jelly with Custard take?

About 40 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of lemon in Agar Jelly with Custard?

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Agar Jelly with Custard ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Agar Jelly with Custard vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

Can I make Agar Jelly with Custard without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Agar Jelly with Custard?

Bread, potatoes or a simple salad. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
