45 min Easy Vegetarian

Ingredients

  • 2 cans chickpeas
  • 2 sweet potatoes or 3 carrots, chunks
  • 1 can tomatoes
  • 2 onions

  • 2 tsp cumin, 2 tsp coriander powder, 1 tsp cinnamon, 1 tsp paprika, 1/2 tsp turmeric
  • 1/2 cup dried apricots or raisins

  1. Soften the onions in olive oil for 8 minutes, then the garlic.
  2. All the ground spices in for a full minute until the pan smells of them. This blooming step is what separates a tagine from a stew.
  3. Tomatoes, sweet potato, chickpeas, apricots and 2 cups water. Salt.
  4. Cover and simmer 30 minutes. Don't stir much — you want the pieces whole.
  5. Lemon juice and zest at the end to cut the sweetness.
