Veg Momos

A weekend project that turns into thirty dumplings and a very good chutney.

70 min A proper cook Vegetarian

Ingredients

  • 2 cups maida
  • 3 cups cabbage, finely shredded
  • 1 carrot, grated
  • 1 onion, finely chopped
  • 8 garlic cloves, 1 inch ginger, minced
  • 2 tbsp soy sauce
  • 1 tsp black pepper
  • For chutney: 6 dried red chillies, 4 tomatoes, 4 garlic cloves, 1 tbsp sesame seeds
  • 2 tbsp oil

Method

  1. Dough: maida, salt, water. Knead until smooth and firm, cover, rest 30 minutes.
  2. Filling: squeeze the water out of the shredded cabbage. Mix raw with everything else — cooking it makes it watery.
  3. Roll very thin discs, thinner at the edges than the centre.
  4. Filling in the middle, then pleat and pinch shut. Any shape that seals is a correct shape.
  5. Steam 12 minutes in a greased steamer with space between them.
  6. Chutney: boil the tomatoes and chillies 10 minutes, blend with roasted sesame, garlic and salt.

Questions people ask about Veg Momos

How long does Veg Momos take?

About 70 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Veg Momos?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Veg Momos ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Veg Momos vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.
