Vatha Kuzhambu

Tamarind, no dal, no coconut. Sharp and salty and it keeps for days.

35 min Some work Vegetarian

Ingredients

  • Lemon-sized tamarind, soaked in 2 cups water
  • 2 tbsp sambar powder
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 tbsp chana dal
  • 15 curry leaves
  • 3 dried red chillies
  • 1 tsp jaggery
  • Hing
  • 4 tbsp sesame oil
  • Rice for 2

Method

  1. Sesame oil is not optional here — it's the flavour. Heat it, add mustard, fenugreek, chana dal, red chillies, curry leaves, hing.
  2. Add the tamarind water, sambar powder, salt and jaggery.
  3. Boil hard for 15 minutes. It must reduce and thicken until the oil floats on top — that's when the raw tamarind taste is gone.
  4. Take off the heat and let it sit 10 minutes.
  5. Serve thick, a spoon at a time, over rice with ghee. Papad and a dry poriyal on the side.

Questions people ask about Vatha Kuzhambu

How long does Vatha Kuzhambu take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Vatha Kuzhambu?

Sesame oil is not optional here — it's the flavour. Heat it, add mustard, fenugreek, chana dal, red chillies, curry leaves, hing.

What can I use instead of tamarind in Vatha Kuzhambu?

Use lemon juice plus a little jaggery, or amchur. None of them are quite as deep, so taste as you go.

Can I make Vatha Kuzhambu ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Vatha Kuzhambu vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Vatha Kuzhambu?

Papad and a dry poriyal on the side. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
