Onion Uttapam

Thicker than a dosa and much harder to get wrong.

25 min Easy Vegetarian

Ingredients

  • Dosa batter, slightly thick
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chillies
  • Coriander
  • 1 carrot, grated (optional)
  • Oil or ghee

Method

  1. Mix the vegetables together in a bowl with a pinch of salt.
  2. Medium tawa — cooler than for a dosa, because this needs to cook through.
  3. Pour a ladle and spread only slightly. It should stay thick.
  4. Scatter the vegetable mix on top and press down gently with the spatula.
  5. Oil around the edges, cover, 3 minutes. Flip, 2 minutes.
  6. Chutney or just curd.

Questions people ask about Onion Uttapam

How long does Onion Uttapam take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of onion in Onion Uttapam?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Onion Uttapam ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Onion Uttapam vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Onion Uttapam?

Chutney or just curd. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
