Cabbage in Coconut Milk

Cabbage stops being boring the moment coconut milk gets involved. Fifteen minutes.

15 min Easy Vegetarian

Ingredients

  • 1/2 cabbage, shredded
  • 1 cup coconut milk
  • 5 dried red chillies, broken
  • 5 shallots or 1 onion, sliced
  • 1 tsp turmeric
  • 1 tsp lemon juice
  • Salt

Method

  1. Bring shallots, chillies, turmeric, coconut milk and salt to a boil in a wide pan.
  2. Cabbage in. Two or three minutes, no more — it should still have a bite.
  3. Off the heat, then the lemon juice. Adding it while boiling splits the coconut milk.
