Tomato Timbales

A stuffed tomato hidden inside a potato ball, deep fried. Absurd and completely worth it.

50 min A proper cook Vegetarian

Ingredients

  • 6 round tomatoes
  • 750g potatoes, boiled and mashed
  • 2 cups peas, boiled and crushed
  • 7 slices bread, soaked and squeezed
  • 2 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • Oil for frying
  • Salt

Method

  1. Cut the tops off the tomatoes and scoop them hollow. Keep the tops.
  2. Mix the squeezed bread with the mashed potato, garam masala and salt. Divide into six.
  3. Fry the crushed peas with tomato pulp, turmeric, chilli powder and garam masala until dry. Cool it — hot filling steams the shell apart.
  4. Fill the tomatoes, replace the tops, then wrap each one completely in potato mixture.
  5. Deep fry until golden. Halve them to serve so people can see what's inside.

Questions people ask about Tomato Timbales

How long does Tomato Timbales take?

About 50 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of tomato in Tomato Timbales?

Use canned chopped tomatoes, roughly 1 can per 4 fresh. Add a pinch of sugar to offset the acidity.

Can I make Tomato Timbales ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tomato Timbales vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tomato Timbales?

Halve them to serve so people can see what's inside. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
