Bharwa Baingan

Small brinjals stuffed with a peanut-coconut masala. Looks like effort, mostly isn't.

40 min Some work Vegetarian

Ingredients

  • 8 small brinjals
  • 1/2 cup peanuts, roasted
  • 1/4 cup grated coconut
  • 1 tbsp sesame seeds
  • 1 onion
  • 1 tbsp ginger-garlic paste
  • 2 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp tamarind pulp
  • 4 tbsp oil

Method

  1. Slit each brinjal into quarters from the base, keeping the stem end intact.
  2. Grind roasted peanuts, coconut, sesame with the powders, salt and tamarind into a thick paste.
  3. Stuff each brinjal with the paste. Keep the leftover paste.
  4. Oil in a wide pan, lay the brinjals in one layer. Cover, low heat, turn every 5 minutes.
  5. After 15 minutes add the leftover paste and 1 cup water.
  6. Cover and cook 12 more minutes till the brinjals collapse when pressed.

Questions people ask about Bharwa Baingan

How long does Bharwa Baingan take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

Can I make Bharwa Baingan ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Bharwa Baingan vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Bharwa Baingan?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
