Tofu Bhurji

Egg bhurji without the eggs. Fifteen minutes and just as good on pav.

18 min Easy Vegetarian

Ingredients

  • 400g firm tofu, crumbled
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 capsicum, chopped
  • 2 green chillies
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp kala namak
  • 1/2 tsp garam masala
  • 3 tbsp oil

Method

  1. Press the tofu between two plates for 10 minutes to squeeze the water out, then crumble it by hand.
  2. Cumin in oil, onions till soft, then capsicum and green chillies.
  3. Tomatoes, turmeric, salt. Cook till they break down.
  4. Tofu in, fry on medium 6 minutes so the water cooks off and it starts to catch.
  5. Kala namak at the end — that's what makes it taste eggy.
  6. Garam masala, coriander, lemon. Pav or roti.

Questions people ask about Tofu Bhurji

How long does Tofu Bhurji take?

About 18 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of tofu in Tofu Bhurji?

Use paneer, cubed the same size. It browns faster, so drop the heat slightly.

Can I make Tofu Bhurji ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tofu Bhurji vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tofu Bhurji?

Pav or roti. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
