Thalipeeth

A multigrain flatbread with the vegetables mixed into the dough. One thing to cook, not two.

30 min Some work Vegetarian

Ingredients

  • 1 cup jowar or bajra flour
  • 1/2 cup besan
  • 1/2 cup atta
  • 1 onion, finely chopped
  • 1 cup coriander, chopped
  • 2 green chillies
  • 1 tsp ajwain
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric
  • Oil

Method

  1. Mix all the flours with the onion, coriander, chillies and spices, then add water slowly. Soft dough, no resting needed.
  2. Take a ball, flatten it directly on a greased sheet of plastic or banana leaf with wet fingers. It's too fragile to roll.
  3. Make a hole in the centre with your thumb — that's where the oil goes and how the middle cooks.
  4. Flip it onto a hot tawa, peel the plastic off.
  5. Oil around the edges and in the hole. Cover, 3 minutes, flip, 2 more.
  6. White butter, curd, or thecha.

Questions people ask about Thalipeeth

How long does Thalipeeth take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of atta in Thalipeeth?

Use plain flour, though the dough will be softer and need less water.

Can I make Thalipeeth ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Thalipeeth vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Thalipeeth?

White butter, curd, or thecha. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
