Matki Usal

Sprouted moth beans in a coconut masala. Cheap, high protein, and it eats like a curry.

Ingredients

  • 2 cups matki sprouts
  • 1 onion, chopped
  • 1/2 cup grated coconut

  3. Ginger-garlic, tomatoes, chilli powder, goda masala.
  4. Add the roasted paste, fry 4 minutes till the oil separates.
  5. Sprouts and 2 cups water, salt. Simmer 15 minutes.

Questions people ask about Matki Usal

How long does Matki Usal take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of onion in Matki Usal?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Matki Usal ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Matki Usal vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Matki Usal?

Bhakri or roti, with raw onion and lemon. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
