Shortcrust Pastry

Cold butter, ice water, minimum handling. Every pie on this site starts here.

45 min Some work Vegetarian No oven needed

Ingredients

  • 340g plain flour
  • 1/4 tsp salt
  • 170g cold unsalted butter, diced
  • 90ml ice cold water
  • 100g icing sugar for a sweet version

Method

  1. Everything must stay cold. Warm hands are the enemy here.
  2. Rub the butter into the flour and salt until it looks like breadcrumbs — or pulse it in a processor a few seconds at a time.
  3. Water a little at a time, lifting and turning the flour so it spreads evenly.
  4. Bring it together into a ball the moment it holds. Kneading develops gluten and makes it tough.
  5. Wrap and chill at least 30 minutes before rolling.
  6. Add the icing sugar with the flour for sweet shortcrust.

Questions people ask about Shortcrust Pastry

How long does Shortcrust Pastry take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of maida in Shortcrust Pastry?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Shortcrust Pastry ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Shortcrust Pastry vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Shortcrust Pastry without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.
