Shortbread

Three ingredients. Butter, sugar, flour, and nothing to hide behind.

45 min Easy Vegetarian

Ingredients

  • 2 cups maida
  • 225g cold butter, cubed
  • 2/3 cup sugar
  • 1/4 cup cornflour
  • 1/2 tsp salt
  • Extra sugar to dust

Method

  1. Cold butter, rubbed into the flour, sugar, cornflour and salt with your fingertips until it looks like breadcrumbs.
  2. Press it together into a dough. Do not knead — the less you work it the shorter and more crumbly it stays.
  3. Press into a lined tin, about 1.5cm thick. Prick all over with a fork.
  4. Chill 20 minutes.
  5. 160°C for 30-35 minutes until pale gold. It should barely colour.
  6. Score into fingers while hot, sugar over the top, then cool completely in the tin before separating.

Questions people ask about Shortbread

How long does Shortbread take?

About 45 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Shortbread?

Press it together into a dough. Do not knead — the less you work it the shorter and more crumbly it stays.

What can I use instead of maida in Shortbread?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Shortbread ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Shortbread vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Shortbread?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Shortbread?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
