Rolled Cheese Omelette

The French method — low heat, constant movement, and it comes out soft rather than browned.

10 min Some work Contains egg

Ingredients

  • 3 eggs per person
  • 1/2 cup grated cheese
  • 2 tbsp butter
  • 1 tbsp chives or spring onion
  • Salt, white pepper

Method

  1. Beat the eggs until completely uniform — no streaks of white left at all.
  2. Butter in a non-stick pan on LOW. If it sizzles the pan is too hot.
  3. Eggs in. Stir constantly with a spatula, shaking the pan, for about 90 seconds until it looks like soft curds.
  4. Stop stirring, spread it flat, scatter the cheese down the middle. 20 seconds.
  5. Tilt the pan and roll it over on itself from one side to the other.
  6. It should be pale yellow with no brown at all. Chives on top.
