Ratatouille

Summer vegetables cooked separately, then together. Patience is the only technique.

50 min Some work Vegetarian

Ingredients

  • 1 brinjal, 2 courgettes or lauki, 2 capsicum, all in chunks
  • 5 tomatoes, chopped
  • 2 onions
  • 8 garlic cloves
  • 1 tbsp dried herbs
  • Fresh basil
  • 6 tbsp olive oil

Method

  1. Cook each vegetable separately in olive oil until browned, and salt each one as it goes. Doing them together steams them into mush — this is the whole recipe.
  2. Set each one aside as it's done.
  3. Last: onions and garlic, soft, then tomatoes and herbs. Cook 15 minutes into a thick sauce.
  4. Everything back in the pot. Simmer gently 15 minutes, stirring rarely.
  5. Basil and olive oil off the heat.
  6. Better after an hour. Bread, rice, or an egg cracked into it.

Questions people ask about Ratatouille

How long does Ratatouille take?

About 50 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Ratatouille?

Cook each vegetable separately in olive oil until browned, and salt each one as it goes. Doing them together steams them into mush — this is the whole recipe.

What can I use instead of capsicum in Ratatouille?

Use any colour. Red is sweeter, green is sharper.

Can I make Ratatouille ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Ratatouille vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Ratatouille?

Bread, rice, or an egg cracked into it. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
