Plum and Almond Tart

Almond paste on puff pastry, plums fanned over. Twenty minutes of assembly.

50 min Some work Vegetarian

Ingredients

  • 320g puff pastry
  • 100g ground almonds
  • 1 tsp almond extract
  • 2 tbsp milk
  • 1 tbsp honey
  • 8 plums, sliced
  • 2 tbsp brown sugar
  • Toasted flaked almonds

Method

  1. Roll the pastry between baking paper into a 35x23cm rectangle.
  2. Score a 2.5cm border and crosshatch the middle, not cutting through. The crosshatching stops the centre puffing up under the fruit.
  3. Mix the almonds, extract, milk and honey to a smooth paste and spread it inside the border.
  4. Plum slices layered over, keeping a few back.
  5. Brown sugar scattered over.
  6. 190°C for 30-35 minutes until the pastry is deep golden.
  7. Flaked almonds on top.
