Puff Pastry from Scratch

Rough puff — butter cubed straight into the flour. Five folds and it laminates itself.

100 min A proper cook Vegetarian No oven needed

Ingredients

  • 250g plain flour
  • 1 tsp salt
  • 250g cold butter, cubed but not rock hard
  • 100ml cold water, plus up to 50ml more

Method

  1. Sift flour and salt, add the cubed butter and toss lightly to coat. Leave the cubes whole — those become the layers.
  2. Water in, mixed to a firm, rough dough.
  3. Press into a square, wrap, 30 minutes in the fridge.
  4. Roll in one direction only into a 20x50cm rectangle. You should see streaks of butter through it.
  5. Fold into thirds, turn 90°, roll out again. Repeat five times, chilling 20 minutes whenever the butter softens.
  6. Chill an hour before using. Warm butter means no layers, so stop the moment it feels greasy.

Questions people ask about Puff Pastry from Scratch

How long does Puff Pastry from Scratch take?

About 100 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Puff Pastry from Scratch?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Puff Pastry from Scratch ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Is Puff Pastry from Scratch vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Puff Pastry from Scratch without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.
