Potato Bread
Boiled potato in the dough and the potato water for the yeast. Stays soft for days.
Ingredients
- 400g potatoes, peeled and diced
- 3.5g dried yeast
- 1 tsp caster sugar
- 1 tbsp sunflower oil
- 1 tsp salt
- 325g strong white bread flour
- 1 tsp poppy seeds
Method
- Boil the potatoes 15-20 minutes until tender but not collapsing. Keep 75ml of the cooking water and let it cool to lukewarm.
- Return the potatoes to the dry pan on low heat for 2-3 minutes to drive off moisture, then mash.
- Bloom the yeast and sugar in the reserved potato water, 10 minutes.
- Mashed potato, oil, salt and flour mixed with the yeast liquid to a dough.
- Knead 10 minutes. It stays slightly tacky — that's the potato, don't fight it with flour.
- Prove 1 hour, shape into a loaf, prove again.
- Poppy seeds on top. 200°C for 35 minutes.
