Apple Strudel

Layered filo with almonds and cinnamon between each sheet, not just inside.

50 min A proper cook Vegetarian

Ingredients

  • 3 cooking apples, peeled and cored
  • 70g butter
  • 100g blanched almonds, chopped
  • 1 tsp cinnamon
  • 150g dark muscovado sugar
  • 160g filo pastry
  • 60g caster sugar
  • Milk for glazing

Method

  1. Slice the apples thinly and drop them into cold water so they don't brown.
  2. Melt the butter. Mix the almonds, cinnamon and muscovado sugar.
  3. Cut the filo into four sheets about 30x50cm. Keep the stack under a damp cloth — filo dries out in a minute.
  4. Lay one sheet, brush all over with butter, scatter a third of the almond mixture. Repeat twice more, then top with the fourth sheet.
  5. Drained apples along one long edge, then roll up using the paper to help.
  6. Seam down, brushed with milk and sprinkled with caster sugar.
  7. 200°C for 20 minutes until deep golden.
