Peach Galette

A free-form tart. No tin, and the rustic folded edge is meant to look uneven.

80 min Some work Vegetarian

Ingredients

  • 225g shortcrust pastry
  • 50g caster sugar
  • 2 tbsp plain flour
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 large peaches, peeled and sliced
  • Maple syrup for brushing
  • Sugar for sprinkling

Method

  1. Roll the pastry between floured baking paper to 3-4mm and cut a 23cm circle. Chill 10 minutes.
  2. Toss the peaches with the sugar, flour, cinnamon and vanilla. The flour thickens the juice so it doesn't run out.
  3. Fan the peaches in the centre, leaving a 2.5cm border.
  4. Fold the border up over the edge of the fruit, pleating as you go.
  5. Brush the pastry with maple syrup and sprinkle sugar.
  6. 180°C for 35 minutes until deep golden.
