Papdi Chaat

Assembly only, ten minutes, and it makes any evening feel like an occasion.

15 min Easy Vegetarian

Ingredients

  • 24 papdi
  • 2 cups thick curd, whisked with sugar
  • 2 potatoes, boiled and cubed
  • 1 cup boiled chickpeas
  • 1 onion, chopped
  • Green chutney and tamarind chutney
  • 1 tsp chaat masala
  • 1 tsp roasted cumin powder
  • Sev, coriander, pomegranate

Method

  1. Whisk the curd with a little sugar and salt until smooth and pourable. Thick curd sits on top instead of coating.
  2. Lay the papdi out flat on a plate in a single layer.
  3. Potato, chickpeas and onion spooned over.
  4. Curd, then both chutneys in zigzags.
  5. Chaat masala, roasted cumin, chilli powder.
  6. Sev, coriander and pomegranate last. Serve within two minutes — papdi goes soft fast.

Questions people ask about Papdi Chaat

How long does Papdi Chaat take?

About 15 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of curd in Papdi Chaat?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Papdi Chaat ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Papdi Chaat vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Papdi Chaat?

Serve within two minutes — papdi goes soft fast. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
