45 min Some work Vegetarian

Ingredients

  • 75g oats
  • 75g buckwheat flakes
  • 70g mixed seeds
  • 70g peanuts
  • 70g almonds
  • 115g dates, chopped
  • 45g raisins
  • 30g dried apricots, chopped
  • 105g smooth peanut butter
  • 100g honey

Method

  1. Spread the oats, buckwheat and seeds on one tray, the nuts on another.
  2. 180°C — 12 minutes for the oats and seeds, 10 for the nuts, until lightly golden. Toasting is what makes these taste of anything.
  3. Cool, then chop the nuts coarsely.
  4. Mix everything dry together with the dates, raisins and apricots.
  5. Warm the peanut butter and honey until runny, pour over, and mix until every piece is coated.
  6. Press hard into a lined tin, then chill until firm before cutting.

Questions people ask about Mixed Seed Bars

How long does Mixed Seed Bars take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Mixed Seed Bars?

180°C — 12 minutes for the oats and seeds, 10 for the nuts, until lightly golden. Toasting is what makes these taste of anything.

Can I make Mixed Seed Bars ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Mixed Seed Bars vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Mixed Seed Bars?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Mixed Seed Bars?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
