Lauki Kofta

Grated lauki turned into dumplings so nobody knows they're eating lauki.

50 min A proper cook Vegetarian

Ingredients

  • 1 large lauki, grated
  • 3/4 cup besan
  • 1 tsp ginger-chilli paste
  • For gravy: 2 onions, 3 tomatoes, 10 cashews, 1 tbsp ginger-garlic paste, 1 tsp coriander powder, 1/2 tsp garam masala
  • Oil to fry

Method

  1. Squeeze the grated lauki bone dry with your hands. Keep the juice for the gravy.
  2. Mix with besan, ginger-chilli paste and salt. Just enough besan to bind — too much makes them heavy.
  3. Roll tight balls and fry on medium till golden. Drain.
  4. Gravy: blend onion, then tomato with cashews. Fry the onion paste 10 minutes, then ginger-garlic, then tomato-cashew paste till the oil separates.
  5. Add the lauki juice plus water, salt, powders. Simmer 10 minutes.
  6. Add the koftas at the table, not before — they turn to mush if they sit in gravy.

Questions people ask about Lauki Kofta

How long does Lauki Kofta take?

About 50 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of besan in Lauki Kofta?

Use chickpea flour is the same thing. At a push, rice flour binds but will not taste the same.

Can I make Lauki Kofta ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Lauki Kofta vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Lauki Kofta?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
